Zachariah Cramer
Responsibilities
During my time with the ISU Culinary team, I was tasked with assisting in various projects. I had an active role within helping out with recipe edits, both in the kitchen and behind the scenes. Additionally, I assisted with other facilities whenever they needed help.
Accomplishments
One of the greatest accomplishments this summer was being able to assist in the grand opening of Island Grille at Hawthorne. I got to see and partake in food prep for the concept as well as test the recipes alongside Chef Nolan Green, the Associate Director of Culinary Development.
Learning experience
A huge take away that I learned from this summer was that not all of the projects that you spend most of your time on will always be a success. As much as it is a bummer for some projects to last a majority of your summer working, there are always more things to look forward to.
What advice would you give?
Keep your options open when it comes to food science. I have gotten the chance to meet a lot of great people who keep ISU Dining running and the work that they do is outstanding. But part of me wants to also explore areas outside of recipe development/test kitchen, and I want to learn more about each area so then I can be prepared to handle whatever comes my way.
